NOLA is just like any other city that caters to tourists. Be aware of your surroundings, if it doesn’t feel right it ain’t right, and don’t walk around by yourself under the influence. I think the typical targets are young party goers that are inebriated.  I visit the city often and I’m a solo traveler. I just do my best to be aware of my surroundings especially at night 

Maybe they say 'happy holidays' because they don't know if you are jewish, christian, muslim, atheist - and they just want to be kind and encompassing of everyone.  Your theory is weak- if you don't like people saying happy holidays XXX just say that! 

As a client, I sometimes feel like other clients minimize an escort's concern for safety. Sure, a texted face pic could be BS and doesn't guarantee safety. But, how many of us we welcome a stranger into our home or hotel room sight unseen? Of course, we don't want to feel like a provider is screening us out (though I often think that's for the best), but I'm sure providers also get cat fished and deal with nutty clients. So perhaps we can all be a bit more empathic? 

New Orleans is a world away from being a typical southern city. And yes, crime has gotten really bad there. Just use common sense, and be aware of your surroundings. It's a great city to walk in, but one can easily wander into a block or neighborhood where you really don't want to be. Most of the French Quarter remains full of tourists, so there is safety in numbers. The garden district is lovely, but is surrounded by really tough neighborhoods. Regardless, I'll be visiting NOLA until I die. Lordy I love that place!

I'm assuming @vaharo6805 you're from the USA? Technically if you're hiring a guy on rentmen for sex it's illegal. But it happens nonstop everyday and the amount of providers & clients that get in trouble with the law is probably less than 1%. The best thing to do if you're wanting to hire someone on there is to do a search on the forum here to see that they are legit and they deliver a good experience.

Have you considered fully filling out your client profile on RM? It contains almost identical “intos”, “looking for”, etc., same as providers fill out. You can write a profile about yourself as well.
