Press down with spatula to maximize contact with pan and fat. Let them cook a while before turning. Then keep them moving, allowing them to sit and brown after each flip. Too much salt in our diets already and I don’t add it to my cooking or at the table. Today my blood pressure was 121/70 and I am 78. samhexum and jeezifonly 1 1

I really like hash browns-but I probably like Potatoes O'Bryan better. I was going to say that the hash browns at IHOP are very good! The right texture and flavor, without overwhelming onions (if there are any at all).

To carry on a theme of how the best hash browns are made-- -when my parents went to New York City years ago-possibly for the first time-they wanted to go to a Kosher Restaurant as there weren't any in the medium size Texas town I grew up in. There might not even have been any in Dallas at the time. They find one, and I think the waitress (if that's not too politically incorrect in these more enlightened times) talked up the chicken soup. So my Dad orders it. At the time for the bill, the waitress comes up to the table and asks my Dad how it was. Dad said something like it wasn't as good as my Mom's (Note: My Mom was present during all this. But Dad wasn't just buttering my Mom up. My Mom always made excellent soup and matzo balls (in case anyone is interested-hers were delicious floaters (vs sinkers-IYKYK)-except possibly one time when I have no idea what the heck happened). Nightowl Posted September 20 Posted September 20 To me hash browns are potatoes. Period. Most restaurants pad them with peppers and onions, two tastes I do *not* want in my mouth in the morning. samhexum 1
