About 20 years ago I toured the Venetian hotel in Las Vegas to see its sustainability program in the back of house operations. Food waste from the kitchens was donated for free to the local pig farm, offset by the cost of less trash collection for the hotel.

The first time I attempted hash browns on a camping trip, I bought dehydrated hash browns in cartons. I had no idea what to expect. The cartons are stored at room temperature. To prepare, open a carton and fill with hot water, close carton and let sit for a few minutes. The dehydrated potatoes will have absorbed the hot water. Then, empty carton into pan or griddle and brown. These turned out surprisingly good. So good, that I no longer just buy them for camping.
