Im sitting here trying to decide to jack off of not. I have a date tomorrow with a great escort I've been pursuing for months. Over time, I've learned to not pressure myself over the act of cumming.

I think this has to be a personal decision @glennnn and everybody's different. My only advice to you would be to try both ways, find out how your body functions if you jack off up to the day before you have sex with a hot escort and also try saving it for 72 hours or so to see if it makes a difference. If you are with someone who pushes all your buttons, I doubt it will make much difference BUT we all have different libidos, which is why individual advice on this is pretty worthless.
