When I retired at 61, my partner (already retired then for 6 years)and I felt that the first thing we had to decide was where we wanted to live. My partner had spent his first years of retirement constantly traveling. Living where you already are is fine if you can foresee a happy future there, but we wanted to experience a complete change of scene (and climate) in a new home, so when I retired we immediately moved across the country to Palm Springs while we were still young and healthy enough to easily make new friends and establish a new network of support services --doctors, travel agents, social organizations, banks, tax accountants, auto services, gyms, etc. Since I was going to continue working online part-time to one of my employers, I had to make sure I had the right set-up to do that
Once settled in, we then had to figure out how we wanted to spend our new leisure time. My partner tried volunteering at a local museum, but it turned out not to be a good fit, so he found the Stroke Recovery Center only a block from our home, and settled in as a volunteer working with people who had suffered strokes and were participating in reading groups, something unlike anything he had ever thought of doing before, and he did that a couple of days per week for eleven years.  I volunteered at the local "Adult School," working with people who had never graduated from high school and were studying to finally get their diplomas. That led me unexpectedly to a new hobby: the teacher mentioned one day that the tennis club down the street was offering reduced rate new memberships because it was the end of the tourist season, and he suggested that I join him there. I had never played tennis, but I went with him, found an instructor there, and ended up as a fanatic, playing several days a week. So the best thing about retirement was finding a new activity that was totally unforeseen.
The secret to retiring happily is careful planning how you want to live as a retiree, but also remaining open to the possibility of becoming involved in activities that you had never contemplated.

A few comments:
1) He describes himself as “famous professional bodybuilder” - That could be verified, right? Does anyone here who might be familiar with the world of bodybuilding recognize him?
2) His phone number does have the area code for Las Vegas - and typically the fake ads have an area code that does match the city in which they’re placed
3) His ad was created Jan 7th and on Jan 21st he uploaded a video of himself - but I can’t tell if that video seems A.I.-generated or not. 
 
4) He says he requires some “light screening” of clients - whatever that means - but it occurred to me that a fake ad would not typically declare a requirement like that since it would probably alienate a lot of people from responding 
So could these observations make us lean towards thinking he’s real?

I think it might have been a combination of him agreeing to your requests on the phone just to get your business, and him assuming that someone looking for a 1AM booty call was obviously horny and would accept pretty much anything he was willing to give you.

Asking for payment up front means expect junk food and a quickie.

The client isn't tricking the escort or being misleading about their looks, the client pays partially so that that their looks don't have to be a deciding factor and the escort is agreeing to that deal.
Someone using fake or highly inaccurate photos to get you to a location to engage with them under pre-meditated false pretense is a very very different thing. It would destroy any sense of trust or safety i would need with that person to engage in the encounter with them because to me if they weren't who they say they are than it's that much more likely that their motivations for being there may not be what they said either, which would create the feeling of being in danger. The worst that could happen is not just bad sex. To me, someone who feels the need to deceive in that way is likely to be there to cause me some sort of physical harm. So that's just a situation i couldn't go through with personally.

It's the "Long Beard" trend that I'm hoping will pass/fade soon...

It's all about chemistry. One of my best regular hires had just average looks. But we got along so well I couldn't wait to see him again.
