Basically, he took two sick days from work.  He did not need to apologize for being sick, but he  did need to express condolences about your time together being interrupted   At  the least, after he was well again, a compensatory offer should have been made.  It would have been awkward for you to bring it up, but as he did not, you  should have done so.   Something along the lines of:  I know you feel bad about not being at your best  for our weened together, but I am confident you will make up for that the next time we get together. would be a way to initiate such a conversation.   
If he gives no indication of any type of remorse for the interrupted weekend and does not see fit to try and make up for it, I believe you should consider it a Lost Weekend and him a Lost Companion.

Staying on topic but addressing the NYC market, I have found the NYC guys on SA to be a lot more realiztic than the guys in random places like Bessemer City NC. You find these guys that are looking for several thousand a month from platonic mentors.  The big city guys are more realistic and likely to understand the market and the unspoken obligations on their part. 

When I was on Seeking (years ago), I had a standard ‘Thanks for your interest but No, thanks’ response for such guys.
 
Some were just exploring but if they were goodlooking, I added that I was fit and in good shape and had a healthy appetite for a full physical relationship.

Those who may recoginize my posts know that I have had several "arrangments"  over the last close to 10 years now. I am single but have a very full life, so I am really not looking for someone 24/7. In fact that would be more work than the benefits it brought. So I have never had someone local. I see them about once every 6 weeks. They get an allowance and I pay all expenses. One I paid $2,000 a month. He lived in Philadelphia. Lots of travel and airfares.   One I leased and apartment in NYC for $ 5,000 a month (nice place in Hell's kitchen, no hotel bills) Third one I paid $1,500 a month . Again lots of travel and airfares. Currently a new guy on the west coast, $1,500 a month. Travel is going to be pricey as I fly him first class. He is the best of all and I will probably pay him more if it stays as positive.  All of these guys have had gainful employment and saw me about once every 6 weeks. I am sure that I wasn't the only one they saw, but maybe the only one that compensated them.  They all ended pleasantly for good reaseons, got out of school, transferred etc. I have great memories of all and would greet them fondly if our paths crossed. As for the $120,000 guy. If that's all he did then I suppose the comp is fair. Quite frankly I don't know if would respect someone that was that shall we say shallow? It's interesting seeing the range of ways that the guys basically say that they'd like to be paid but don't want to meet. Likewise, those who list themselves as "non-smoking" but post pics of themselves smoking. Those who specify "platonic" or "straight", but of course are showing off their bodies in their pics. Searching for "allowance", for example, can be entertaining.
But yes, there's a lot of possibility there if you're willing to spend the time (and money, of course).

Have you thought of applying to the Catholic priesthood? I think they use that approach.
