Often it’s best to make a booking by the second message, and then spell out likes (etc.) after that. Then he knows you’re serious. You can always cancel if it unfolds that it’s not a fit,

Why make a booking first and then say what are you into and not into? So they can then say "I can't do that" and cancel the booking? I said all of that and said at the end "Is this something you're interested in? We can book right away".

Your way is like booking a table at a restaurant, showing up and saying "I'm vegan" and the restaurant going "This is an outback we don't have vegan food". 

My way is calling the restaurant "Hey I'm Vegan, do you accommodate that?" so they can answer whether they do or not before making any reservation.
