Nope, not a thread about a bitchy queen. So, my garden isn't producing tons of zucchini, squash or cukes. This year it's all about green beans. I'm picking them, giving them away, eating them 2x a day and still pull 5gal buckets of them every couple of days.

So, what do you do with your over exuberant veggies?

Try Harvesters. Here in Kansas City they distribute fresh food as well as the traditional caned and boxed items. Great organization.

I always can my excess garden output. In the off season I still have home-grown eats and they don't have the chemical add-ins in the commercial stuff.

 

It's a lot easier than most people think.

Until a few months ago, we had a half dozen fruit trees, which were often loaded with oranges, grapefruit and lemons. We couldn't possibly use them all, so I would take bags of fruit to my tennis club, and they would disappear within an hour. I also gave them to friends who liked to juice them or cook with them; one friend made limoncello with the lemons. Now we have no fruit trees, and I miss being able to just walk outside in the morning and pick a ruby grapefruit for breakfast, or grab a lemon at cocktail hour for my gin and tonic. I haven't bought citrus fruit in so long, I don't even know what it costs.

I already pickle, can, freeze and dehydrate much of what comes from the garden. I also donate to the 2 local food pantries that accept fresh veggies from private sources. I also have a list of non-mobile seniors I deliver to.

Been pickling green beans for years, nice alternative to capers as well at tasty bloody mary stir sticks.
