If an escort want to limit his clientele and don't answer to every client that want to meet , does the person enjoy escorting but just don't wanna meet other people or they hate it and just using it to make end meet?

Not always. 

Guys who are older and still in the biz are there for good reason:  They have built a solid base.

When you have a circle of loyal, reliable clients, you don't see anyone as competition.  Ever.

At that point, it's not survival.  It's a career.

Yes of course, that's specifically why I said "usually" not always. There are exceptions to every rule.

Are you sure that there is even a rule to which exceptions occur other than in your own mind.  There is an assumption underlying your thinking that older escorts are somehow trapped, or have limited options or are victims of their situation.   All of that could be true for any particular guy, or none of it.  I imagine there are executives making  - 6-7 figures who have the same experience.
