I sous vide quit a bit, wouldn't consider it it for foie gras. I think you'd still have a lot of fat in the bag, and as you say no color - no Maillard effect. After gently doing the foie gras in a saute pan, I'll often saute some fresh pineapple or similar compliment to the foie gras, then deglaze with some port for a bit of sauce. -

As a sourdough bread baker with two different sourdough starters in my fridge...gluten free bread baking is hard to wrap my head around. There are some artisan bakers who let the dough ferment extra long times...this lessens a gluten reaction in some. I've used some unusual whole grain and "ancient" flours which can cut gluten down significantly. Usually not enough for a gluten free person though. I've had better luck doing cookies and such with Gluten free products, but not so much bread.

I think what someone chooses to pay for a car closely parallels many discussions here on the forum on why some clients are happy paying more for providers and some are more comfortable with providers that charge less.

OK so Elite season 7 had some weak episodes. I don't think anyone went to class as Las Encinas🤷🏻♂️ Joel made a pretty good eye candy replacement for Patrick. And there was plenty of r-rated soft core gay porn an shirtless hotties. I found it worth slogging through and episode 8 was very well done with a surprise twist at the end.

Agree on caution there. One gentleman in his mid-sixties, quite obviously jerking himself whenever this one hot twenty-something came into the steam room. Spa attendant kept looking the other way. Later I saw the older gent tipping said attendant heavily. 🤷🏻♂️ Ironically...Hour later I'm chatting up the twenty-something in one of the hot tubs. He was an army kid, at Mandalay on a spa day pass. Lots of conversation, he mentioned he'd never been upstairs to a room at the Mandalay 😉 and was ready to head to mine. unfortunately we couldn't work it out 😢 but goes to show style and conversation can win the day! Edit: this was pre-covid.
