That doesn't mean he has HIV. Personally, I think there's nothing wrong with asking an escort's HIV status. So I would just ask him and just use protection and you'll be fine.

It's a stretch to assume someone is HIV+ or not based on what porn studio they worked for. It's also a stretch to assume that all providers will be honest (or perhaps even informed) about their status.
