It is something you would have to speak with the service provider about directly because it will vary. While one escort advertising as bottom may be simply an expression of preference, another may just as easily mean it as exclusive.

Good question. I am unable to bottom anymore and sometimes I see a guy that I am really attracted to and wonder if they would be flexible.
