Years and years ago, I read a long article in some food magazine about curries. It really captured my interest and I started cranking out curries. I blended my own spices instead of using store- bought curry powder. I would buy fresh coconuts and make my own coconut milk, and on and on. I don't remember how long it took, but eventually my fascination waned.

Whenever I go to a tapas restaurant, I always hope they have a favorite of mine on the menu. Cold chicken salad with a curry mayonnaise.

For me I have only ever liked Eastern and Southeastern Asian countries curry. By far the best for me is Japanese Curry. I especially love those curry puff breads you can find in Asian bakeries like Fay Da, Tour Les Jours, Pan Ya, etc... I have always disliked Indian curry though. I just can’t deal with the smell. After those 2 regions then come West Indian curry.
