That's a great idea! I do something similar but use a knob of butter and white miso paste - if you haven't tasted this combo yet, it's awesome. Melt the butter and miso in a pan on low flame and add in the cooked pasta. Pair with protein (I use tuna) and veggies. Quick and easy meal.

Good friends of mine who love New Orleans and got married there, always love the Royal Sonesta. It’s in the heart of everything but can get quite noisy if the room faces Bourbon Street. During festival time, a lot of hotels have minimum multiple night stays and the rates are often higher during this time period. If you do go, try Coquette, a cute restaurant in the Irish Channel neighborhood. A little bit off the beaten path but the food is amazing. I still think about their dishes/ food to this day

Salmon is one of my favorite dishes... easy to make. I usually just put in an oven-to-table ceramic dish and use a little oil, salt and pepper, bake it in the toaster oven at 350 for 20-25 minutes and drizzle with sweet soy sauce in the last 5 mins. But I like your method where you add veggies to the mix!

Have fun! Apparently, most Asians observe a similar zodiac as the Chinese, but in Vietnam, this is the year of the Cat as opposed to the Rabbit. Apparently, in the race to determine the zodiac order or animals, the cat pushed the rabbit out of the race... Interestingly, the Vietnamese also eat bitter melon at this time of year to signify that bitterness has passed and happy times ahead. Whereas, the Chinese would only eat auspicious foods and anything bitter would be shunned.

Unicorn, you are so generous with your suggestions. Really appreciate all the insider tips I just booked the jetblue tickets and the VRBO, along with a few of your restaurant recommendations. We'll be there for 5 nights total, so wanted to leave some breathing room for my friend to chose other restaurants. The Yelapa excursion sounds lovely... i think we'll have enough to do for 4 days (not counting Monday when we arrive and Saturday when we depart)... The Diana cruise, is that a gay cruise? I'm sure i can find them when i visit a tourist center or pick up the gay rag in PV? -

I found a place in the zona romantica that is a few mins from the beach. Already booked Cafe des Artistes, Le Palapa, and the Iguana Restaurant. I prefer the convenience of walking to restaurants and local attractions. Would welcome any must visits/dos as I am a newbie to PVR. -
