Unless you are frightened off by the absurdly exaggerated articles regarding the dangers of Mexico I would definitely recommend Puerto Vallarta. Would definately second both PV in Mexico as suggested by Epiganos, and EVERYTHING RockHard said too, especially the bathroom if over 2 or 3days, which is why considering renting an apartment, condo, villa etc makes sense because you can make sure there are 2bathrooms, you get the kitchen, and there is privacy galore.

If beaches are important I would suggest Nuevo Vallarta. Few minutes north of PV. Much better beaches and very nice resorts. Beaches in PV are very narrow and congested.

The only problem with Nueva Vallarta is that it is so damn far from everything. The beaches in the Zona Romantica are really quite nice. Staying in the Zona Romantica gives one access to great restaurants, great shopping and proximity to the Blue Chairs gay beach. If seclusion and getting away from it all is what one is looking for the Nueva Vallarta might be better. Just keep in mind that it requires a taxi or bus ride to get into Puerto Vallarta Centro or Zona Romantica. Check out the La Palapa Condos directly above the restaurant of the same name.
