As usual I was not paying attention and didn't notice the turn that this thread had taken... I posted early and then never followed through.

 

So, I see that it took quite the circuitous route... but something good did come out of all this... Yeah! Mmmmmm pizza!

 

Actually I like my pizza simple with a few fresh ingredients... Some examples:

 

Fresh tomato, fresh basil, extra virgin olive oil...

 

The traditional mozzarella... with a high quality muzzarell' on our apizz' as we call it from where I come. Emphasis on high quality where the natural "oils" simply exude lovingly from the cheese... Again add a bit of extra virgin and you are in heaven.

 

Now if you are going to put something extra on pizza it has to be eggplant… I can eat eggplant day time of the day any day of the week…

 

Still with Italian food the emphasis is on high quality… when a cuisine has few and very simple ingredients it is important to use only the absolute finest and freshest ingredients as the flavors are so exposed… if you cheat it ain’t gonna taste the same.

 

And who was it that mentioned pine nuts… a pesto pizza is also to die for!

 

It's about 8 AM as I type this... now I know what I really want for breakfast...

 

Also, gotta remember to water my basil plants as well as my tomatoes… As I said there’s nothing like the freshest ingredinets…

My basil was out of control last week so I made some pesto with a few changes. I used half walnuts and half pine nuts. Put in the usual garlic, salt, pepper, romano cheese, olive oil and added whole milk ricotta. Very creamy and was wonderful on pesto and lobster pizza
