Toronto might not be the most exciting place for all y'all, but it is my first trip outside the US in years. I'm a bit concerned with all the provider stories, but I'm a consumer. Any concerns for us? Also wondering about all the things and guys to do while up north. Thanks for any tips and feedback.

I don't know what kind of "provider stories" you've heard, but I've always considered Canada safer than the US in most aspects. Just be careful as you'd be in any other city you visit: avoid dangerous neighbourhoods and situations; all of Downtown, where most guys are, is pretty safe; visit the bars and the strippers, all on the same street; have fun, enjoy the summer and the exchange rate. Cheers.

I hope no one minds if I add a followup question to this topic.  How safe is it to hire a provider in Toronto when I am from the US?  Is there anything I need to be aware of/careful of?  Any thoughts and help is greatly appreciated.

Selling is not criminalized. Buying is. That’s about the only difference relevant but shouldn’t make much difference.

An escort can use the courts to enforce payment by a client withholding same; again, not very relevant.

Not sure what provider stories you are referring to, but Bozo is a frequent visitor to Toronto. In fact, he will be there again at the end of this month. As stated above by @GTA-Daddy, hiring in Toronto is no different than hiring anywhere else: use common sense, hire providers well-reviewed here at COM, avoid hiring anyone into PNP (unless you're into that), and NEVER send a deposit upfront. 
As a first-timer, you may want to visit the Cock Bar. Many of the strippers who work there are also available to render their services outside of the bar.
As for tips of what to do in Toronto: the Harbourfront, the Distillery District, Royal Ontario Museum are all popular tourist attractions and favourites of yours truly ☺️. Hanlan's Point is a "clothing optional" beach, very popular with the local gays, and easily accessible by ferry. Always a ton of eye candy there. And even more when Bozo is there with his toes in the sand. And if you're a baseball fan, go see a Blue Jay game. 
No need to ever take a cab or UBER. Toronto has a great mass transit system - subways/buses/trolleys/ferries.
