First guy I hired, I told him in messages it was my first time and I wanted to talk first and take things slow (I booked two hours). The minute we walked into the room and the door closed, he had his tongue down my throat. I asked him to slow down and talk but that became awkward fast. So I threw caution to the wind and went for it. It was hot, but I spent a lot of the time we were going at it in my head. Afterwards, we talk awhile and I was way more comfortable. I've seen him and few more times and now prepare myself that he's going to go hard out of the gate.
My last hire, I also told him I would be nervous (I get nervous around people I've never met). He gave me a hug when I walked into his place and we talked a bit in his couch. After about 15-20 minutes, he started putting his hands on me and kissing me softly. It escalated from there. It was awesome.
My point is you need to do what is right for yourself but also be aware of how the other person behaves. I know the each time I hire the first guy, things will go from 0-60 in less than a second. With the second guy, I know things will progress more on my terms than his. Both guys are great and I would hire either again and again especially if I came into serious cash, but I have to do less mental preparation for the second guy.
