Arrangements (especially longer term) from seeking.com aren’t the same as a hire from RM. There are no hard/fast by-the-hour, by-the-day “rates”. Chemistry and connection are the name of the game there. I know there are many that are skeptical or dismissive of Seeking - and its users like myself - but it’s been fun for me.

This has been my experience with seeking.com guys, I give them a little something extra but a first class travel experience usually satisfies, at least for mine so far. Seeking.com “allowances” don’t relate to RM providers daily/overnight thinking. My dry aged duck, roasted a l’orange. Really good, dry aging shrinks them a bit, but meat flavor intense and the crispy skin is beyond good.

I makes goat cheese pizza with pesto (made from my garden) as a base sauce all the time. Fresh greens on top last few minutes in the oven.

I was in Salzburg, Austria for a visit many years ago, and it was game and goose festival week of some sort. I went to a really nice restaurant that had a special Chef’s choice 4-5 course of goose. Goose soup, pate, roast goose etc., I don’t remember all the courses. But it was all delicious, and the roast goose as the main entree was perfect!
