Actually, the underwear in the movie (or "garments" as Momons call them) are the new and improved version. In the 1800's the garments were either wool or cotton and were one piece. They were long sleeve and covered the ankles.

 

In 1923 the garments changed again. Only those worn in the temple had long sleeves and long legs. The underwear worn daily was changed to short sleeve and knee length. But, they still remained a single piece which you normally climbed into through the neck opening.

 

On the male underwear there was a fly in the front and button "rear door" for bathroom access.

 

In the 1980's the underwear became a two piece design. Like I previously mentioned they now appear like long boxers or boxer briefs and a t-shirt.
