Small scale, chemical and machine free farming and food preservation. (Canning, freezing & dehydrating.). Great exercise, plenty of outdoor time, great food all year.

When I was working full time, playing oboe was my hobby; now that I'm officially retired and going to music school full time, I'd have to say that still puttering around 8 hours a week at my former job doing computing is now a hobby.

Gardening is mine, I have a great perennial border I've been working on since we've lived in this house. Plus I grow vegetables that are hard to find in most stores. I think my kids are the only ones in America who eat salsify on a regular basis!

Apricot Chicken Thighs

 

18oz bottle of French Dressing (Cheap Brand)

8oz jar of Apricot Jelly (Sugarless Brand OK)

1 packet of lipton onion soup mix.

1 Family pack of chicken thighs (10-12 thighs)

 

Preheat oven to 325°. Place the chicken thighs into a 9" by 13" baking dish. Mix the other three ingredients together (I use a 2 cup measure) and pour over the chicken. Brush out evenly.

 

Check at an hour, object is to get the chicken to 165° to 200°. Visually when the top has that slightly dark brown look (see photo) For my oven about ten minutes more.

 

Remove chicken from drippings and let rest for 15 minutes. Drain drippings immediately and put pan to soak while you eat. Drippings make an excellent gravy and flavorful base for soup.

 

Leftover thighs into quart ziplock bags (two thighs per bag) stores well in both fridge and freezer. Microwaves well to reheat. Total time about 90 minutes.

Hmm oyster plant? Wow, do you get the seeds from Johnny's?

 

This year I've got Belgian endive roots in the cellar for forcing later in the winter. That's the most obscure item I grow aside from sun chokes.
