sometimes escorts prefer to be in touch by IM (instant messenger) and not by phone...

Is their choice! 

Considering so many guys have burner apps and 2nd numbers they use for hiring at least chatting on RM allows them to identify a potential client by his profile's name and block him if they don't like the interaction or they think he might leave them a negative review.

actually, phone numbers are available in most ads, just a minority of escorts don't have their numbers listed.
