I throw em in the pot of boiling water, and cook for about 6 mins.... then rinse under cold water and let sit.... they de-shell perfectly every time.

I simmer them in water not yet boiled for about 3 minutes. Turn off the heat and let sit for 30 minutes.

Mine recipe is quicker, and they turn out good.

1. I put the eggs in cold water.

2. Bring the water to a boil.

3. Immediately turn of the heat and cover -keeping the pot on the turned off hot burner for 10 minutes.

4. Then into an ice bath.

I've had good success using this method to keep the green ring off the yolk.

I’ve got a little egg cooker thing that I adore. Put in the eggs, add measure water, turn it on and when it buzzes you have perfectly cooked eggs every time.
