The most important thing is knowledge. Good escorts (and really good clients) get tested regularly and quickly notify clients of any potential issues. I did actually get Chlamydia from an escort but was able to test and treat very quickly because he tested frequently and informed me quickly as well.
In my opinion, the risk of STDs is actually higher if you're having frequent Grindr hookups over frequent escort hookups. Not every dude on Grindr tests themselves regularly or even cares or knows how to contact you if they did catch something.
As a client, this is also something that should be part of your escort conversation. How frequently do you get tested? Do you notify your clients if you test positive for an STD?
If you don't like their answers, then maybe don't spend time with them.

Had a scare once when a provider notified me that he had been exposed and therefore I had been exposed to an STD. I thanked him for the heads-up, got tested, waited 10 days, got tested again, but nothing came from it. Ultimately it is up to you to protect yourself by taking the necessary precautions.
