I sous vide quit a bit, wouldn't consider it it for foie gras. I think you'd still have a lot of fat in the bag, and as you say no color - no Maillard effect. After gently doing the foie gras in a saute pan, I'll often saute some fresh pineapple or similar compliment to the foie gras, then deglaze with some port for a bit of sauce.

As a sourdough bread baker with two different sourdough starters in my fridge...gluten free bread baking is hard to wrap my head around. There are some artisan bakers who let the dough ferment extra long times...this lessens a gluten reaction in some. I've used some unusual whole grain and "ancient" flours which can cut gluten down significantly. Usually not enough for a gluten free person though. I've had better luck doing cookies and such with Gluten free products, but not so much bread.
