  1. Scottish Salmon is one of the ones where I researched my source, and I do buy farm raised. Even for sushi/sashimi my source is excellent.
  2. Yes I pay attention. I don’t buy farm raised seafood unless I can identify and research the source. Over farmed salmon has to have artificial color added back into make it salmon colored..it goes white if over farmed. No thanks...Tilapia one of the most over farmed here in SoCal. Wild caught for me...

  7. Yes, I have 4 fresh wasabi roots in my refrigerator right now....they come from a hydroponic farm in Oregon. Grated fresh wasabi is absolutely *nothing* like the powder/reconstituted type. Goes with sushi/sashimi of course. Also excellent with A5 Wagyu, mashed potatoes, scrambled eggs, etc. The finer you grate it the hotter it gets.

  13. Me either....especially after tonight’s dinner...a thick slice of dry aged bone in prime ribeye (dry aged the entire primal cut my self), seasoned and vacuum packed and placed into sous vide for a couple hours to 120°, then quickly seared twice on each side, rested, and consumed. Yum
