It’s happened to me...plan a weekend away with all kinds of leads for fun...then nothing. Comes with the territory I guess, key is to keep thinking straight and don’t get desperate and let the “little head” decide to rush into something. I try and keep alternate plans with friends, reading, movies on hand.

I was about 7 and sent off to a summer camp. First or second night, big group showers (supervised) for all campers so 6-7 year olds thru those just hitting puberty. Bit of a Resurrected thread here. I finally came across a recipe that required a very long and hot cook. I was researching a way to do duck confit in the sous vide. Ultimately I melded together a bunch of google research...I seasoned the duck leg/thigh pieces, placed each (I had 4) into invidual foodsaver bags with some fresh herbs and some extra duck skin covering the meaty side, and vacuum sealed. So I had questioned earlier needing ping pong balls to resist evaporations during long cooks. The confit went 16 hours at 160°. The no evaporation trick? I covered my sous vide vessel (16 quart stainless stock pot with food grade plastic wrap before going to bed! Works perfect and food grade plastic wrap is safe to 225° After the confit cooled I broiled it to brown and get to temp, was excellent

All of the possible geographic “filter” drop down choices can be helpful but more confusing, and will sometimes limit your filtered selections to a very few guys. I’ve found I need to pay more attention to the filters before hitting “Apply”. I’m using A4A mobile on my iPad.

By the way...I don’t want anyone here to think my posts might indicate I don’t respect these providers. Nothing could be further from the truth. There is a growing frustration caused by many factors...that rates are very difficult to pin down, and increasing in many markets. No one...but no one respects these pros more than I do.
