Where to buy pasteurized egg whites?

I'm at the Arequipa airport waiting for our flight to Lima. The national drink here is the Pisco sour, which is made with egg whites. In the past, when I've seen egg whites in my drink menu app, I've just passed on trying that drink. But I would like to try to make some Pisco sours when I get home. Where does one usually buy pasteurized egg whites? Can one use Egg Beaters? If not, would one find pasteurized egg whites in large liquor stores like BevMo or in supermarkets?

 

I have a feeling that when I get back to Lima, finally back at sea level, I'm going to feel like Superman!

I think any of the non-yellow egg-white-only packages are pasteurized.

 

(I remember having to look over packages when I wanted to make a prune whip, and found that pasteurized whites will NOT turn into the peaks needed.)

My understanding is that Salmonella is an issue due to the processing that eggs undergo by large manufacturers. If you can get a local supplier of eggs who can sell them to you, same day, then they are (probably) safe.

 

It appears that the processing depletes the shell of its natural protection against bacteria. Sounds good in theory.

 

When I was in Med school, we had a bake sale to raise funds for the new entering class. [Yeah, the place was that broke. We didn't even have a bookstore for two years]. I made four "Chocolate Silk Pies", that were a cup of sugar, a stick of butter, and 4 raw eggs, beaten for two minutes after each new egg, then refrigerated. Yes. RAW egg. And at a medical facility. And—SURPRISE—no one sick.

 

I might try it again, when I'm on Martha's Vineyard, and I know the eggs are fresh. Or if I could get certified, salmonella-free eggs.

  1. It was 40 years ago, when eggs could be eaten raw.
  2. The school was broke. They had plans on the books to disperse us to other medical schools if they went belly up. [note: I had no TV for four years. I had no phone my first year.]

Truthful statements cannot be considered libel, by definition. I once wrote a 1-star review on Yelp of a business that tried to defraud me (the only 1-star review I've ever written). 40 minutes after it went on line, the owner called me and told me he was going to sue me if I didn't pull the review. I then shouted into the speaker "Go fuck yourself, you little piece of shit!!". I then informed Yelp of the threat and amended my review to mention the fact that this business would probably have more 1-star reviews, but that they may have been intimidated by the threats similar to the one I received. And they now have a warning on Yelp about the company threatening its customers.

That's true - the truth is an absolute defense to an allegation of defamation/libel. But would you really want to spend many thousands of dollars defending against an allegation of libel by a deep-pocket plaintiff if you could avoid it?

I doubt that whatever medical school it is, that they would be worried about the potential bad publicity that a bunch of horny queens might be bringing up in this forum. That being said, if someone tries to intimidate me out of saying something truthful, my response is "Bring it on, mother-fuckers! I'll counter-sue you for abuse of process, and really spread out the bad publicity in an even louder forum."

Yes, the legal and risk analysis is spot-on, but has it occurred to those commenting that @gallahadesquire may not want to disclose which school it is because he feels a bond or loyalty to his alma mater despite its flaws or because such disclosure might make it possible to identify him?

Oh dear, I didn't think of "horny queens" as a derogatory term, nor, of course, did I mean to exclude myself from this group. If anyone took offense at being called a horny queen, I apologize. I consider myself to be the Queen of the horny queens!!

If Gallahad were to reveal the med school's name, would his account of the bake sale be considered defamatory? I see two issues.

 

First, from Gallahad's description, this sounds like an independent fundraising effort executed by students. Would a reasonable person expect a medical school to supervise an independent bake sale? And would the carelessness of a few students have a material impact on the school's overall reputation or those of its graduates?

 

Second, I don't know when Gallahad went to med school, but let's say all this happened 25 or 30 years ago. Would a reasonable person consider it a reflection on the school's current reputation?

After seeing the remake of the Mikado, in which the Lamplighters changed "If you want to know who we are, we are gentlemen of Japan" to "If you want to know who we are, we are gentlemen of Milan," I'm thinking of doing a remake of The Pirates of Penzance in which the lyrics are changed from "For I am a Pirate King! And it is, it is a glorious thing to be a pirate king..." to "For I'm a Unicorn King! And it is, it is a horny thing to be a unicorn king." That way it could all be super PC and not offend any pirates (or even any Milanese!).

40. And they are just crazy enough. I was eventually on faculty, and my boss tried to get me fired. Let's just say The Institution and I are not on the best of terms.

Nice analysis, Fresh. Best to just not go there. The older I get, the more I realize what a virtue discretion is.
