Beer consumption is dropping (more boutique beer and less industrial) but in recent years we have drunk heaps of wine.

I've never heard that before.

Cork can taint wine (I've heard 5% of bottles as the number that are corked) but it doesn't always ruin wine. When the cork or screwtop debate was on here, one of the arguments against corks was what other industry would accept a 5% failure rate.
