Spanish-speaking country in Latin America recommendations?

What spanish-speaking country in Latin America (ie,  not Spain) would you recommend and why? Planning to spend one week at the very end of the year (the week between Xmas ans NYE).

It would be helpful if you could be more specific about what you are looking for during your visit.  Since you specify "spanish-speaking" I will leave Brazil out of my responses:

* Sexcation: Mexico, Colombia, Dominican Republic, Cuba

* Tourism/History:  Ecuador, Peru, Mexico, Argentina

*  Ecoturism: Costa Rica

*  Food Tourism:  Argentina, Peru, Mexico

*  Beaches:  Mexico, Dominican Republic

Thanks. I noticed you didn't mention Argentina and Uruguay? Are they bad on the list especially for sexcation?

I did mention Argentina several times but not for sexcation because the options are limited.  Uruguay was a paradise for a very specific kind of paid sex experience up until about 10 years ago.  It came to an end...so I would not consider a sexcation there.

Can you expand on that, please? I never heard of Uruguay (or Argentina) as sexcation destination.
