Although i do personally like those things in an overnight to answer your question, no not alway or necessarily. I have had scenario's of overnights when we've had dinner, fun, shower, movie on the couch, a lot more fun, shower again and had decided upon a time that we mutually wanted to be sleeping by. No cuddling or intermittent fun until in the morning again before shower and a breakfast. If the person was a horrible snorer I wouldn't have problem of them sleeping in a guest bedroom. ( Caveats. I do primarily host at my home and i personally tend to favor the "G4P/straight/Bi" professionals who naturally wouldn't chose cuddling as their 1st choice if not required haha). But I am an equal opportunitist for others. But regardless after a good amount of sleep the morning involves fun so to me that can be a mutually succesful "overnight" physically sleeping apart from a loud snorer.

I think you're totally being cool and fair. If he has indeed indicated what is "off and on the clock" then yeah pay for the meals and whatever other entertainment you both are doing/enjoying as that may come up. My only red flag would be if he steered you towards "shopping" for him or anything like that if it felt forced or out of the blue. But if he's cultivating a relationship it just could be to help make you be someone he can count on that is consistent and reliable whenever your mutual schedules align type of a thing for future meet ups in either his city or your city if and when he travels there.
