This is chipá, traditional in Paraguay and Argentinean Northeast. In Brazil they have a variation they call pão de queijo. It is a basically a biscuit made of cheese and yuca flour. The basic dough, with tiny variations in the recipe is cooked in different ways, fried, baked, grilled.
