Apricot Chicken Revisited!!

That sweet exchange made my heart skip. - Mama's boy TR. :)

That sweet exchange about Mama's recipes reminds me of a funny story about Mama rvwnsd and Grandma rvwnsd. Grandma, in this case, being my dad's mother showing my mother how to make some of my dad's favorite recipes. Grandma showed my m0ther what to do and my mother followed the instructions to the letter. The dish was terrible. She made it again, with my dad watching. He confirmed she did EVERYTHING exactly like Grandma. Still terrible.

 

Grandma came to visit for the weekend and she observed my mother. Dish came out terrible. Then she and mom made it side-by-side and they realized the problem. Grandma was 4'11" and had tiny hands. Mom was 5'8" and had huge hands (almost as big as mine and I have a hard time fitting in most gloves). Grandma measured everything using her little Grandma hands. Mom was measuring with her huge Mom hands. Mom grabbed measuring spoons and measuring cups and had Grandma measure with her hands, put the ingredients in the spoon/cup, and Mom wrote down the measurements. Perfect meal!

 

Dad inherited his hands from Grandma and my brother inherited his from Dad. I inherited mine from Mom. When my brother tells me to use a handful of something we all correct him.

 

PS: I'm a total Mama's boy. I miss her dearly.

On my shopping list for tonight.

 

Please forgive me the few crumbs on the stove. It happens when you cook. I'll clean the stove directly after dinner!! The only thing missing is the Pillsbury Biscuits I'm about to put into the oven. (I didn't time this out well). :confused:

Let not your memories be troubled @alexslaveboy. The only thing my recipe is missing is your (and mine) mothers' love.

 

I included the recipe in my other thread. But here it is again---- the recipe calls for thighs. But you can use any part. I actually prefer breasts.

 

Here's a picture of my 1st batch last week.

Here's the recipe.

 

Ingredients

  • 12 chicken thighs
  • 1 cup apricot preserves

  • 1 cup French dressing
  • 1 (1 ounce) package dry onion soup mix

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl combine the jam, dressing and soup mix. Mix together.
  3. Place chicken pieces in a 9x13 inch baking dish. Pour apricot mixture over chicken and bake uncovered in the preheated oven for 50 to 60 minutes.

 

The sauce is incredible over mashed potatoes or noodles.

 

PS-I'll bet it would be good with some fresh or canned apricots added to the mix. I'm not sure how it would be if you substituted the apricot syrup from the can of apricots for the preserves/jelly. It might not be thick enough.

Add 1 tsp Brown Sugar and 1 tsp Vinegar for a little tang. Garnish with Sesame seeds to make it look purdy.

Remember that many products have a "use by" date only because the FDA requires them on all ingestables. Even bottled water has a "use by" date. Water does not spoil! o_O

Actually there is no federal requirement. Packagers put a date on according to their idea of when the taste will begin to decline -- and to encourage you to throw it away while still perfectly edible and buy more. It's a marketing tool, not a federal safety requirement.
