Most email programs have an Options dialog where you can specify the default browser, news reader, etc.

It may be at the OS level on the Mac. Not sure.

Both are "Modern standards compliant" browsers and that is important as more and more sites switch over to xhtml and css.

Currently, Safari wins by a nose at being the most compliant and has some very aggressive people making it more compliant each release.

Firefox, is a bit less compliant but has the concept of tabs. Very useful if your forever being interrupted and need to be able to quickly switch back and forth. The underlying engine has more people working on it but at a slower rate.

Both are easy to use and are equivalent in rendering speed with Safari being "slightly" faster. You mileage may vary; all demonstrations were by a professional driver on a closed track.
