I decided on a Parmesan Rosemary Loaf. I combined two different Italian Cheese Herb Bread Recipes. I ended up needing to add more water as one of the recipes has a lot more cheese than the other one. IMG_1615.thumb.jpeg.bc835dfe9e886b4b9bb22dc8b11ec254.jpeg

Here's the dough currently after the kneading and during its 1st rise. 
 

The dough ball has come together reasonably well and feels a bit sticky which I believe is what it's supposed to feel like.

Well it's certainly risen exuberantly. The recipe called for 2-1/4 tsps of active dry yeast. I reduced that to 2 tsps because I was using bread machine yeast. I also used vital wheat gluten which one recipe said to use and the other didn't. 
 

I hope it hasn't risen too high to bake well.

I'm afraid to look in case it keeps rising

I initially thought it was a bit bland and needed salt. But when I put some butter on it-the salt flavor from either the butter, the bread, or both combined really came thru. I put a tablespoon of dried rosemary and around a cup of grated Parmesan. You can taste the rosemary mostly in the crust-although still on the subtle side. I'm not sure if I taste the Parmesan or not. I might try mozzarella next time to see if it has a stronger flavor.

All in all though a much better bread than my pumpernickel of a few weeks back.

Thank you. I reshaped it a bit during one of the rises.

I had some external validation last night about this loaf. One of my housemates said it was, and I quote, "Really good". So this recipe is definitely a keeper!! 🤗🤗🤗

 

He also said he may want to use my machine to make some sour dough.
