Best Encrypted Messaging Apps?

Signal, Telegram, Viber, Discord, Burner, WhatsApp, etc.?

I'm not exceptionally tech savvy or tech literate, so I appreciate any recommendations. 

I use iOS and just set up a VPN for my phone as well as my laptop. 

I'd like to use extra caution, even just for discretion, privacy, and confidentiality (both mine and others). 

I don't mind spending a few bucks a month for an app if it's more secure and encrypted and perhaps enables a more anonymous setup.

I could give you a lot of technical mumbo-jumbo, but I'll boil it down to this...  I work in cyber security for my day job.  My customers are most of the large banks on the east coast.  Those folks that I interact with from the banks "off the record" for certain things are done via Signal.  That is their preferred application of choice.
