From what I gather reading through this site over the years....I would guess that most service providers worry about one-size-fits-all attitude of some clients. I see people booking a massage and then complaining it was "only" a massage. There seems to be a real disconnect with certain people about the way masseurs charge for services. I have read multiple comments where a client wanted the whole salad bar to be available to him for the set price and then thinking that a 10% tip is adequate.
