I think most folks who hire from Grindr do it because they want someone amateur who doesn't advertise in a mainstream site and in most case they want a lower rate. Yes, they're less likely to die but if they require being hospitalized they'll get beds away from others seen as less likely to survive therefore increasing the mortality rate. I'm sure @Pensant is happy to count with your approval. Back to subject I'm sure that in such a competitive market like NYC most escorts might do it but so far only one has named names.
