Mmmmmmm, I miss that flavor. And @rvwnsd you are correct. Potatoes from Ore Ida, Simplot and most major processors wtould blanche potatoes in a beef/fat/tallow before freezing. Then....at the restaurants a beef/tallow enhanced shortening would be used to fry these delicious spuds! Oh, and never, ever give me fries that have been sprayed with cornstarch/flavor enhancers. Many chains have tried these...they are superior for staying crispy longer in the bag/box, and external spices and flavors can be added. But they turn me off, horrible texture, rough tongue/mouth feel. A few major chains have tried and failed at these as their mainline fries. -

I fondly remember Fuller Brush, Helms Bakery, Adohr Milk (milkman would knock and come right into house and stock fridge!), and ice cream trucks. To this day the ice cream truck jingles (albeit a bit more irritating than in my youth) make me think of summer and the sound of bare feet slapping on the concrete sidewalks running to the truck “MOM can I have a dime?” Today I have (authentic) local tamale and fresh fruit vendors roaming the streets near my home, both have *excellent* products!

I could go on and on here....but won’t unless asked. I’ve got many, many years in this sort of business - marketing, consulting, advertising, both sides of franchising. Here’s the reality....people say they want healthy at fast food/fast casual outlets...but they don’t buy the healthy products. The products are there to avoid the “veto vote”, the customer in the car, in the group, or the family member who insists on “healthy”...even if that’s a salad with high fat toppings McDonalds is being cautious because they need to carefully watch sales and how that affects franchisees, corporate earnings, and shareholder price as they introduce more healthy products to sales mix. As McDonalds is in the stratosphere of the top 6-7 chains ringing up more that $2 million/annual sales....they can afford to experiment, what percentage of $2 million annual sales do suppose salads with healthy dressings and apple slices are in the sales mix? Relatively minuscule. Focus groups say time and time again “fast food is my guilty pleasure“, “French fries are my favorite”, “I’ll eat healthy during the week”, “I eat healthy at home”, etc. My point is....big fast food and fast casual chains will offer more healthy choices when consumers *actually* demand it with their buying dollars. Right now it’s “perceived healthy” for the politics, let’s see when real healthy arrives?? -

I don’t want to sound dismissive but I also suspect that based on all the rate-bashing that goes on here when $300-400/hour gets approached - this forum isn’t populated by a demographic wanting “high end” agencies. As curiousity seeking...maybe. That said I’m not sure where else one would start other than here?
