My philosophy as well. Maybe its a Chicago thing.

Hmmm...my grandma, mom, and I were/are from Chicago and we all use a recipe as a starting point, if at all.

My mom was a great cook and enjoyed experimenting ( :eek: ) though sometimes those weren't hits. Once she breaded pork chops with Cream of Wheat. Why, why, why?

 

The finished chops were coated in a thin layer of concrete. Our dentist appreciated that.

 

And her biscuits, as my dad said, would be perfect for skeet.

 

Your Dad sounds like a funny guy.

I've been waiting for his comments.:) To all the rest of you, the man is a wonder. I have never had anything he has made that wasn't just delicious. Thank god he is my chef de cuisine for the PS Weekend Pool Event, as I cannot cook unless I have a recipe which I follow to the letter and it takes me forever. He has already begun planning for next year's event! Of course, there will be deviled eggs even though he insists he hates them.:rolleyes:

  1. Is there a date for next years event?
  2. I love deviled eggs. They're a perfect canvas for creativity.
    • I finally chop smoked salmon and into the yolks with a little cream cheese, and put a tiny amount of caviar on top.
    • My latest is still a work in progress. Some cajun spice in the yolks, cut back on the mayo and substitute a little schmaltz, and top each one with a crispy piece of chicken skin.

I'm a pretty good cook ... give me a recipe, and it will be just what it's supposed to.

 

One day, though, a friend (an excellent cook) asked me to go get fixin's for a spinach salad, and he'd make the rest of dinner. Well, I got to the grocery store, and there were some large, but normal, mushrooms ... with spinach ... parmesan ... thyme ...

 

So I bought them, trimmed them, stuffed them ... best stuffed mushrooms any of us had ever had!

 

other story: My Aunt was of Russian descent, and I don't think she ever used recipes. Her sour cream chocolate cake was unbelievable, and what she did to enhance a roast chicken ... AMAZING. Her [four] daughters inherited her ability to cook. They'd ask her to write down recipes. Then came the critical question:

 

"What do you really do?"

 

Finding out that the Grand Marnier in the chocolate cookies is what made them so friggin' FANTASTIC was an amazing insight.

 

For those of you who are brave enough, find a copy of The Blue Strawbery Cookbook; or Cooking (Billiantly) Without Recipes. The man (? Joseph Heller, unless he wrote Catch-22) was amazing. You have to try Curried Chocolate Brandy and Mushroom Creamed Sweet Potato Soup to realize how odd, and delicious, food can taste!

I thought I might respond to LaffingBear's inquire about the dates for the 2018 Palm Springs Weekend. PLEASE understand that Oliver (our host) makes the final decision regarding dates which he will announces later.

What I am about to say is simply an "educated guess" on my part. For various reasons primarily weather Oliver likes to have the event in April. As oldNbuster noted above Easter is Sunday April 1st so that weekend is out. Oliver ALWAYS departs Palm Springs, for his home, on May 1st and usually likes two weeks to prepare for the move. With those dates in mind my "educated guess" would be to expect the Palm Springs Weekend to be April 14 and 15. AGAIN THIS IS ONLY AN "EDUCATED GUESS" AS THE ACTUAL FINAL DECISION WILL BE MADE BY OLIVER.

I joined the forums in May. I saw alot of posts about Palm Springs. It continues to be be referenced.

 

I know nothing about the event/gathering itself. Who, what, why....?? etc. I don't know who Oliver is.

 

So, I'm just curious.

 

No explanations needed now. As it's likely to be 10 months from now, I'll just wait and watch.
