Nate, that is a really great idea and that pizza sounds delicious. We have a phenomenon in south Florida called coal-fired pizza that I haven't seen elsewhere. They fire the pizza in ovens heated with chunks of coal, the ovens burn super hot and the pizza is AWESOME. The best know is called Anthony's Coal Fired Pizza and they are now branching out to other parts of the country! If you ever get the opportunity give Coal-Fired a try!

 

We have a few coal-fired pizza ovens in my area of NC. Apparently they originated in NY & Philadelphia because coal was more plentiful than wood.

Modern Apizza was referenced in the article and that is one very popular alternative. A relative who lives in Nice, France and can go to Italy when he wants to "eat Italian" recently chose Modern over the "big two" on a recent visit to the area with his family. The original Grand Apizza was also excellent... I know the family and they are relatives of Modern by the way... The father passed... but at least one of the sons is keeping up the tradition... but not in New Haven.

 

Incidentally, Pepe has opened several other locations in CT... including one at Mohegan Sun Casino... for those who prefer not to wait in line...
