Best days/nights for 3 days in Porto Alegre

I know POA is a business town with less action on weekdays but for a three day/night visit which is better: Wed/Thu/Fri or Sat/Sun/Mon?

I'd say Fri/Sat/Sun would be best although it's not one of your listed options. I did the Sat/Sun/Mon stay in late Nov/early Dec of last year (arrived Sat afternoon and left Tues morning) and Monday was quite dead. The only plus, if you're a sauna guy, is that on Monday evening one of the saunas (not Mezzaninu, but I forget the name) while really slow, did have a number of boys with barely any clients so you could be the center of attention if you so desired. But it's better to leave Monday morning, in my opinion.
