Farewell NCM2169

Like most I was sadden to read the news NCM has left this world. I didn't really care for much of what he posted however he was a longtime member of this community who deserves a proper goodbye.

 

He never allowed you to sit on the fence thats for certain. He challenged then came back at you again. And if that didn't get your attention he would start emailing you lol.

 

So why did so many here enjoy NCM? I believe because NCM was always here to share and exchange information with anyone that asked. Whether he was pushing a escort he "didn't manage" or giving advice on a hotel to stay at the man always extended himself to this community.

 

NCM and I did have some common ground, cooking. He loved to share recipes and general cooking tips. So with this in mind I wanted to say farewell in a way I think he would find appropriate a food thread.

 

Now this is not my recipe however I love cupcakes and thought he might enjoy these as well. If you all have a recipe please feel free to add it he would have like to see whats cooking at your place.

 

Chocolate Strawberry Cupcakes

 

125g (3 1/2 oz) unsalted butter

1 cup raw caster sugar

2 large eggs

1 cup plus 1 tbs plain flour

1/4 cup cocoa

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1/2 cup strawberry sauce

1/4 cup milk

 

1. Beat butter on high until soft, about 30 seconds.

2. Add sugar. Beat on medium-high until light and fluffy, about 3 minutes.

3. Add eggs one at a time, beat for 30 seconds between each.

4. Whisk together flour, cocoa, baking powder, baking soda, and salt in a bowl.

5. Measure out milk and strawberry sauce together.

6. Add about a fourth of the flour mix to the butter/sugar mixture and beat to combine.

7. Add about one third the milk/strawberry sauce mixture and beat until combined.

8. Repeat above, alternating flour mix and milk and ending with the flour mixture.

9. Scoop into cupcake papers about half to three-quarters full (depending on whether you want flat or domed cupcakes).

10. Bake for 20-22 minutes at 180C (350F) until a cake tester comes out clean.

 

Now this is the most important step Fedex them to me :p

smoothie

 

well here is how my 16 oz. smoothie is made.. I call it super berry smoothie

 

Put in a blender

 

1/5 cup Raspberries

1/5 cup blueberries

1/5 cup strawberries

1/5 cup blackberries

1/5 cup pineapple or papaya juice or coconut juice (You can add more juice or just use water too)

 

It's so good. Try it at home.

My mother's family came to Virginia from Scotland by way of Northern Ireland in the mid 17th century. This recipe came with them. Each Christmas I make them as gifts for family, friends and neighbors. I have just finished baking the 14th one thus far this year. I dislike traditional fruit cake but love this.

 

PRUNE CAKE

 

Ingredients:

 

1½ cups Sugar

3 Large Eggs

1 cup Buttermilk

1 cup Butter, melted

1 tsp. Cinnamon, ground

1 tsp. Allspice, ground

1 tsp. Clove, ground

1 tsp. Baking Soda

1 tsp. Baking Powder

1 cup Prunes, stewed until soft

1 cup Raisins, soaked in warm water

1 cup Walnuts, chopped

1¾ cups Flour

 

Method:

 

Cream the sugar and the eggs together. Mix soda with buttermilk. Sift four, spices and baking powder, together three (3) times. Mix together with hands stewed prunes soaked raisins and chopped walnuts. Add the prune mixture to the sugar and eggs and mix well. Add flour a little at a time alternating with buttermilk, and melted butter and mix well. Pour batter into buttered and floured spring form pan and bake in center of pre-heated 325 F oven for one (1) hour and forty-five (45) minutes
