Any "smaller" town/city gems in California & Oregon?

Next month I'm going to be road-tripping from Southern California to Portland Oregon next month, reconnecting with a few friends along the way in Palm Springs, SF, Guerneville, Redding, then Portland.

Curious if anyone has recommendations for any gems along that route. I'll be making additional stops in between those places and curious if there might be some providers in California & Oregon I might want to connect with that aren't on the bigger West Coast city radars (e.g. LA, SF).
