Philly provider chiming in: $3,000 is quite premium but could be justified if said provider had notoriety and prestige. I'm [normal] and my overnights range from 900 (incall) to 1,200 (outcall in the immediate Center City area). My overnights are 6 to 10 hours.
Overnights need to be loosely planned, with anchoring activities. Did you discuss all that you might do? e.g., Some like to start with a social activity, followed by dinner, then a nightcap and see where the night goes, with a greeting to the new day that should be mass produced. Some like to stay in for the low-key date night, cooking or ordering takeaway, a movie and drinks, then a nightcap and see where the night goes, with a greeting to the new day that should be mass produced. Either way, if you're on less than 3 hours of sleep the next day, you did it right.
When establishing rates, the best of us consider going rates from other providers in our area. I know my own prowess and experience, so I reasonably set my rates. If you're price elastic, are you confident in the provider's ability to "nail the assignment" and does the rate reflect the intrinsic benefit of your desired experience?
Also, pay attention to how well they communicate in your vetting. Is the interaction giving $3,000 or is it seemingly low budget?

I've also never done deposits. In theory, deposit requirements are good for providers as they add an extra layer of assurance, recoup from time wasters and/or to deter potential ones. Conversely, it's a huge risk to clients with many bad actors afoot. If your desired experience requires much of the provider, be proactive in offering a deposit as a gesture of goodwill - don't try to placate with the notion of tipping or gifts.
