I've been doing some reading. While I was surprised to read it, apparently Julia was wrong about the need to wash chicken before cooking it. According to the USDA this only sprays salmonella and other bacteria around the kitchen. I also read that you shouldn't wash beef or pork either. The way to make them safe is to cook them thoroughly. For chicken that is making sure it reaches 165F.

 

I'm kind of shocked too. While I don't cook often, I routinely used to wash my chops and breasts :p. And obviously you can't totally contain the bacteria. I mean you set down a knife that you used to cut the chicken into the sink-there's bacteria there. But I guess the point is that sticking the source of the bacteria (the chicken, beef, or pork) under a stream of water will spread the bacteria further on kitchen surfaces.

Julia was indeed incorrect about washing chicken before you cook it. Not to brag, but I am quite the little cook in the kitchen, and I have never washed my chicken before I put it in the oven....:eek:

Someone ought to sue Banquet for false advertising. I used to buy that all the time in my younger days. Compared to what's actually in that box, the chicken pieces in that picture might as well have been fed steroids

Ditto with Kentucky Fried. Compared with Popeyes or Bojangles, KFC chicken looks like it was just liberated from Bergen-Belsen.

I am now, always have been and always will be a carnivore. I love blood rare beef, medium rare lamb and moist cooked pork. I also love chicken which I find I am eating more of currently simply because of the ridiculous price of beef. I don’t particularly like cooking fish thus I seldom eat it at home. However, tonight for dinner I had two small sautéed (in butter and olive oil) calamari steaks which I do love but seldom prepare. Once or twice a year I cook chicken livers and calves liver which are supposed to be terrible for me but since I don’t indulge that frequently I don’t give a damn what the nutritionists say. I also love Tuscano Salami, pepperoni, and COSTCO hotdogs – I don’t eat these items every day but when I want them I eat them.

 

As far as I’m concerned most nutritionists don’t know shit and are great fad promoters. Does anybody else remember when even looking at an egg was supposed to be deadly – now they have decided that isn’t the case? Does anybody else remember when we were NEVER to drink whole milk just the blue water stuff – now they have decided that the fat in whole milk is good for us. Does anybody else remember when the less salt in the diet the better – they now claim that too little salt is worse for us than too much – if we have too little our entire system shuts down but if we have too much we simply piss it out?

 

I’m 75 and I intend to continue eating what I want, the amount I want, and when I want. My idea of a great death would be one sitting at a lovely dinner table with a huge blood red steak in front of me and a nice glass of red wine in my hand. Life is good as long as I ignore all the bull shit suggestions from nutritionists.

 

P.S. I'm 6' tall and weigh 185 thus I am NOT obese or fat.

To be fair-I don't think this is quite true. Yes, no salt is bad. But most Americans don't have to worry about that. I think what you quote on salt is still controversial at this point although some scientists believe as you do.

The study on the benefits of the fat in whole milk was all over the radio and papers, including the Wall Street Journal, about a week or two ago. The major study on the evils of salt in the diet, quoted in most government pronouncements, was done in the 1930's and has been taken, until recently, as gospel by the health/medical world. As far as I can tell most nutritional science is in reality fad science.
